Strawberry & Wild Green Salad
I made it! what a crazy week; and for the day(at least) life is back to normal.
This recipe was a original recipe from one of our wine dinners at the restaurant. It is a great springtime recipe with flavors of sweet strawberries, tart balsamic dressing and a great combination of red onions & blue cheese round it out.

Strawberry & Wild Green Salad
5 oz spring mix lettuce
3 c balsamic vinegar
3 c olive oil
3 T dijon mustard
1/2 c brown sugar
1 pint strawberries, sliced
1/4 c shaved red onions
1/4 c blue cheese crumbles
2 T pecan pieces
Method:
1. in large bowl, whisk together vinegar, oil, mustard & sugar until emulsified well. add more sugar or mustard to get the perfect balance of sweet & tartness.
2. in separate bowl, toss lettuce with dressing and top with onions, strawberries, cheese & pecans.
