Summer here!... Maybe not quite yet...

A great warm weather weekend gets you excited for all things summer!... Psych!!! High today of 29. Oh we'll, soon it will be warm & I'll want the snow.

Brown butter Pork Chops on jalapeño smashed Yukons

4 pork chops-frenched
4 oz caramelized onions
2 oz roasted red peppers
1 lb butter, chunked
8 ea Yukon gold potatoes
1/2 jalapeño pepper, diced fine
Salt & pepper
1/4 t jerk seasoning
2 c spinach, arugula or other spicy green

Method:

1. In pan, heat butter on high until it just starts browning. Remove from heat & set aside.
2. Season chops with jerk spice & sear in a little of the brown butter.
3. Top chops with red peppers & caramelized onions & additional butter and roast in pan with a little water in 325 degree oven for 12-14 minutes or until just medium.
4. Roast Yukons with jalapeños, salt & pepper & a little brown butter & roast 15 minutes or so. When soft , smash with a sauté pan.
5. Toss potatoes with greens & plate.
6. Serve with chops topped with onions & peppers & a teas of drawn brown butter.
