Southern Quinney Hot Cakes

This is a recipe that I am sure will become a staple in your recipe books as it has in mine! No need for syrup here. These hot cakes are great any day of the year!

Just remember this... There's alot of great food out there; you gotta just get out there and find it!

Southern Quinney Hot Cakes

2 eggs
2 cups all-purpose flour, sifted
1/3 cup plus 2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
2 cups plus 2 tablespoons buttermilk
4 Tablespoons (1/2 stick) unsalted butter, melted
2 teaspoons vanilla extract

Method:
1. In large bowl, sift all dry ingredients together.
2. Add eggs, buttermilk, butter and vanilla extract and whisk well.
3. Heat on a flat top griddle or smooth teflon coated saute pan; browning on each side.
4. Serve with powdered sugar and some fresh fruit.
