Fettucine with Slow Cooked Pork Ragout
It's no secret that we like to entertain. It's also no secret that we like to enjoy wine. This is a recipe from a wine dinner that I cooked for. Some would say that the wine makes the meal... I disagree a little. I believe wine is a compliment to great food!

Fettucine with Slow Cooked Pork Ragout
2 lb fettucine noodles, cooked
1/4 c diced carrots
1/4 c diced onions
1/4 c diced celery
3 T olive oil
1 6-8 oz pork shoulder steak, trimmed and julienned( bone set aside)
1 lb ground pork
3 28 oz cans ground tomato sauce
1 small can tomato paste
1 stick butter
1 teas minced garlic
salt & pepper
2 teas italian seasoning
1/2 teas dry basil
2 T parmesan cheese
Method:
1. in large sauce pot, heat oil, onions, carrots & celery until translucent.
2. add in pork shoulder with bone & continue browning.
3. once brown, add tomato sauce and reduce heat to low. cook covered about 3 hours.
4. add ground pork, remove bone. add butter, garlic, salt, pepper, seasonings & cheese. continue cooking. add water if sauce is too thick.
5. serve with fettucine and top with additional parmesan cheese.
