Arugula Salad with Shallot Vinaigrette

This recipe comes from an afternoon of being bored in the kitchen & not excited about any of the house salad dressings that I had on hand. Arugula is my favorite salad green & when it comes to a light salad, this should be one that comes to mind.

Arugula Salad with Shallot Vinaigrette

3 oz fresh trimmed arugula, washed
5-8 shallots, peeled
2-3 T. Dijon mustard
2-3 T. honey
1/2 c. white wine
3/4 c. oil
2 oz fresh raspberries
2 oz fresh blackberries
1 oz shaved asiago cheese

Method:
1. in food processor, blend together shallots and wine. once minced, add mustard. slowly add oil until completely emulsified.
2. in bowl mix arugula, berries a & some of the dressing. top with cheese and enjoy!
