Pecan Crusted Halibut
First of all, I don't like fish!!! I know, I know. "How can someone who cooks for a living not like fish?" I think it started as it did with most of us. Mom would occasionally cook those minced fish sticks that really stunk up the whole house. It was pretty much downhill from there. But, the silver lining on this cloud is that even though I would prefer a nice thick steak, flavors are what makes the meal and I can attest to this one personally.

Pecan Crusted Halibut
4 pieces 8 oz halibut portions
1 c. pecans
1 c. goat cheese
5 Roma tomatoes
3 c. spinach
Olive oil
salt & pepper
Method:
1. in food processor, pulse pecans until fine. mix in goat cheese.
2. in hot saute pan, add some oil. season fish with salt & pepper. sear halibut 2 minutes each side until nice brown texture.
3. place fish on oven pan & add some water. crust halibut with pecan & goat cheese mixture. bake in 350 degree oven 8-10 minutes or until nice and flaky.
4. grill tomatoes until charred. let rest & peel skins off. quarter tomatoes.
5. in saute pan with oil on high, combine spinach and tomatoes cooking quickly. season with salt & pepper.
6. plate fish with spinach & tomatoes all around.
