Spring Strawberry Salad
A cool crisp salad.

Spring Strawberry Salad
3 oz fresh spinach
2 c fresh strawberries, quartered
1/4 c red onions, shaved
fresh mint, chopped
1/4 c balsamic vinegar
2 T. honey
2 T. brown sugar
1 T. mustard
Method:
1. in bowl, whisk together mint, vinegar, honey, sugar & mustard. whisk until
emulsified.
2. marinate strawberries in mixture.
3. place spinach on plate, top with onions & soaked strawberries. drizzle extra
dressing on salad.
