STRAWBERRIES FOREVER!
I dedicate this day's post to my wonderful wife who came through labor like a lion, fierce and convicted! As well as my new son Evan Christopher who is as adorable as his brothers! Strawberries are the word of the day because that is the color of all 3 of my boys!!! Yes, all 3 have red hair! crazy isn't it. Anyways peace and love to all those who prayed for us over the last couple of days. We love you all.

Yesterday's Strawberry Salad
A cool crisp salad.

Spring Strawberry Salad
3 oz fresh spinach
2 c fresh strawberries, quartered
1/4 c red onions, shaved
fresh mint, chopped
1/4 c balsamic vinegar
2 T. honey
2 T. brown sugar
1 T. mustard
Method:
1. in bowl, whisk together mint, vinegar, honey, sugar & mustard. whisk until
emulsified.
2. marinate strawberries in mixture.
3. place spinach on plate, top with onions & soaked strawberries. drizzle extra
dressing on salad.
