Perfect Pesto Sauce


Tonight, I thought that since Spring is supposed to be in the air, (High of 45 degrees today with snow showers!) I might suggest a recipe that speaks highly of fresh ingredients. This sauce can be used over pasta, seafood, steaks, chicken & just about anything else you can think of food wise. It is an earthy sauce that can easily be combined with a few other ingredients to add that little extra flavor you might be looking for. Add roasted red peppers or sun dried tomatoes for a little twist. serve with a little cream & butter and you've got a pesto cream sauce, a little red sauce with a touch of pesto has great flavor as well.

Pesto Sauce

1 1/2 lb fresh basil leaves
1/2 c pine nuts
1/4 c walnuts
1/2 c Romano cheese
1 T chopped garlic
1 c olive oil

Method:

1. combine ingredients in food processor pouring in oil at the end to emulsify well.
2. serve as a dip, add to other sauces or use as an ingredient. It can be frozen
for later use as well.
