Citrus Salmon


It's been a few days...Life happens. New son in our lives, Sheri has high BP, Connor & Cameron are doing their best to adjust to a crying Evan.... To be continued! We need a little regularity in our lives in the Quinn household and this is a step for me to appease that.

We have customers come in to our office once a month in a cool environment, no pressure, just ideas. This is where I have complete freedom to create. This is one of those dishes that I did just that.

Citrus Salmon

2 pieces 8oz salmon
olive oil
salt & pepper
6 orange segments
1 T. red pepper, diced
2 T. fresh mango, diced
3 fresh basil leaves, chopped
1 oz orange juice
1 oz butter
8 oz mashed potatoes, fresh made

Method:

1. season salmon with salt & pepper.
2. sear in olive oil in hot saute pan. 2 mins each side starting with skin side up.
finish in oven to desired temp.
3. heat mashed potatoes or make them if necessary.(you can add roasted red pepper
puree for extra flavor if you like).
4. in bowl combine pepper, orange, mango & basil. lightly toss with spoon.
5. in sauce pan, heat OJ. whisk in butter.
6. plate potatoes, salmon, fruit over top & butter drizzled over everything.
