Chorizo & Spinach Breakfast Burrito
My friend, Chip, is a fine musician and somewhat of a culinarian. while he is touring this great country of ours, he likes to eat good food. Sometimes, he snaps pics of what he is about to devour and posts them on his facebook. This one sounded like a great tasting one and I thought that I would write a recipe for you to try on your own.

Chorizo & Spinach Breakfast Burrito
2 flour tortillas 10" round
6 oz chorizo sausage
1 avocado, sliced
2 c spinach
2 oz sliced mushrooms
1 teas cilantro, diced
3 oz cheddar jack cheese, shredded
3 oz shredded potatoes
1 oz butter
salt & pepper
juice from 1/2 lime
salsa
Method:
1. brown chorizo sausage in pan over medium heat. add butter, mushrooms, cilantro, potatoes & spinach. season with salt, pepper & lime juice.
2. add avocado & lay mixture into tortillas. wrap & serve with a side of salsa.
