Tuna & Taz Tar Tare
Anyone ever see Groundhog Day??? If not, rent it. It's stupid, funny, stupid, nice story, stupid, crazy. Classic Bill Murray. (not caddyshack classic, but classic in a different way) Back at Pucci's in the Valley, we were a trendy little spot that did things a little different. Free hand lasagna, chicken under a brick(an actual friggin brick people!) bringing visiting chefs from Italy! Need I say more. I will be exploring some of these recipes in the near future but, it was a pretty cool time in my life and I wanted to share a dish that drove people nuts, they wanted more of it. I never had enough!

Tuna & Taz Tar Tare
4 oz sushi grade tuna(red) diced
4 oz sushi grade Tasmanian salmon, diced
4 grilled artichoke hearts and stems
fresh organic spring mix
2 T extra virgin olive oil
citrus infused oil
2 oven roasted tomatoes, chopped
salt & pepper
balsamic glaze
Method:
1. in 2 separate bowls, mix tuna in one, salmon in the other with oil from artichokes, extra virgin, salt & pepper.
2. on 2 plates, place a biscuit cutter or form mold(a cut piece of 2" PVC pipe works too about 2" high)
3. layer tuna followed by artichokes, then salmon & tomatoes. tap down slightly to set & remove mold.
4. top with citrus oil and fresh spring mix. You may also drizzle a little balsamic glaze around plate as well.
