General Sheri Tso's

Chinese food is my wife's secret indulgence!  She regularly looks and listens to others when they have Chinese recommendations.  Once she drove to Kent when we lived in Cuyahoga Falls to get some chicken fried rice, she was the only person in the entire restaurant at the time but, true to form, the owner of the restaurant when Sheri's food was ready yelled out "CHICKEN FRIED RICE" somewhat embarrassed, Sheri looked around the restaurant, chuckled and rose her hand to get her order! Nice Honey.

General Tso's Chicken

1 lb chicken breast, cleaned & diced
5 dried red chili peppers
3 green onions, sliced
3 eggs, beaten
1/4 c + 2 T corn starch
1 1/2 T rice vinegar
2 T rice wine
2 T brown sugar
1 T sugar
3 T soy sauce
sesame seeds
1 c fried rice blend

Method:

1. in bowl, mix 1/4 c corn starch & eggs.  add chicken and coat.
2. cook chicken in wok or saute until nice and brown. drain.
3. add oil and peppers to wok and heat for 30 seconds.  add chicken to peppers and cook for a couple of minutes.
4. in bowl, add rice vinegar, rice wine, sugars, remaining corn starch & soy sauce.  Blend well.
5. add liquid to chicken dish until sauce becomes thick. 
6. heat fried rice and pour chicken over top.  add green onions & sesame seeds.
