Potato Cake with Apple & Carrot Slaw
Last weekend, we had guests. Good friends that we don't get much of an opportunity to spend time together with. We had wine and appetizers. good friends, good wine, great times! This is one of the appetizers that I made for the evening.

Potato Cake with Apple & Carrot Slaw
6 each Potato cakes(prepackaged ones are fine)
1 fresh apple, cored
1 each red onion
1 each carrot, peeled
2 oz cider vinegar
1 teas siracha sauce
salt & pepper
2 T. olive oil
crumbled blue cheese
Method:
1. cut julienned style apples, onions & carrots.
2. toss in a bowl with vinegar, siracha sauce, oil, salt & pepper.
3. cook potato cakes, top with slaw and finish with blue cheese.
