Porcini dusted Tenderloin Sandwich

Did you ever have a really really really good sandwich?  I have.  And I would like to share it with you.  This sandwich can be changed very easily to adapt it to your taste buds.

Beef Tenderloin Sandwich

1 pretzel roll or sliced foccacia bread
1- 4 oz filet medallion
1 teas. dried porcini mushrooms
1 teas. panko bread crumbs
1/2 teas. rosemary leaves
1 teas. olive oil
1 portobella mushroom
5 leaves fresh spinach
1 teas. horseradish (ground)
1 teas. goat cheese
1 teas. white wine
3 oz sliced potatoes
truffle oil
salt & pepper

Method:

1. in food processor, combine porcinis, bread crumbs, rosemary & olive oil.  pulse until well combined.
2. pound flat tenderloin and crust with mixture.  sear in saute pan 2 mins each side.
3. toast roll or bread.
4. grill portobella
5. whip together goat cheese, horseradish & white wine.
6. fry potatoes and season with salt, pepper & truffle oil
7. assemble sandwich with steak, spinach portobellas, horseradish sauce and serve with potatoes.
