Mushroomy Sage soup

You might not feel it right now, but fall is in the air!  soon, the snow will be falling.  why not have some soup to warm you up?

Creamy Mushroom Sage soup

1 pint cremini mushrooms, sliced
2 portobella mushrooms, chopped
1 pint button mushrooms, chopped
1/2 red onion, diced
1 roasted red pepper, diced
fresh sage
1 teas chopped garlic
1 T. olive oil
1 cup chicken stock
2 quarts heavy cream
1 quart milk
3 oz Havarti cheese, shredded
salt & pepper
croutons

Method:

1.in large sauce pan heat oil, onion, garlic and mushrooms.
2.add stock, peppers, cheese, cream & milk
3.season with salt & pepper.
4.puree and top with croutons
