Jammin Calamari

Calamari.  How can something so disgusting looking actually taste good?  When cooked poorly, it is as leathery as a shoe but, when cooked just right,  it's not fishy at all and has a great smoothness to it!  On our last night in San Francisco, we went to a restaurant in the Union Square district and had Calamari among other things like short ribs, pescatore & linguine with meatballs(Sheri)!  The calamari is what stood out to me and that's quite a strange feeling.  I don't really eat seafood too much, I can cook the hell out of it; i just prefer not to indulge in it too much.  Oh well, maybe it was the city, maybe it was the company or maybe my taste buds are just changing...

Jammin Calamari

cleaned calamari tubes, cut into rings
Jamaican jerk seasoning
rice flour
smoked tomatoes
capers
roasted garlic
lemon juice
salt & pepper

Method:

1.season flour with jerk seasoning
2.dredge calamari rings through flour mixture and fry in oil until lightly browned (about 4-5 mins.)
3.in saucepan, blend together tomatoes, capers, garlic, lemon juice, salt & pepper heating to a slow boil.
4.pulse mixture in food processor until consistency of a chunky salsa appears.
5.serve calamari with side of smoked tomato sauce.
