Baby stuffed eggplant
This afternoon was spent deeply in conversation. As I was prepping for our food show next week, a teammate started speaking about their garden and what an abundance of vegetables they had grown this year...As for me, well, nothing grew in our garden this year; you have to plant it first! I can cook but, apparently I cannot garden>?!

Baby Stuffed Eggplant
2 baby eggplant, sliced in half
salt & pepper
4 oz Gorgonzola cheese
1/3 c bread crumbs
2 T. olive oil
fresh basil, chopped
1 teas. hot sauce
4 Roma tomatoes
2 garlic cloves
Method:
1.heat oven to 325 degrees. roast eggplant with 1 T. olive oil, salt & pepper for 8 minutes.
2.in bowl, blend cheese, bread crumbs, basil & hot sauce.
3.fill eggplant with cheese mixture and reheat in oven until cheese melts properly.
4.quick saute tomatoes with garlic cloves and remaining olive oil.
