Grilled Pineapple Chutney
I love pineapple! Well, a strong like. I know how to cook with it, bake with it, use it in a sentence; but, i would never eat it until 2 weeks ago, someone brought us a pineapple, totally ripe. I cleaned it and tried a piece and holy crap, I actually liked it! Who knew. See, you just never know when that moment is that new things click with you! Life is out there, get out there and try & find it!

Grilled Pineapple Chutney
1 pineapple, sliced in rings
1/2 c roasted red peppers, diced
1/2 c red onion, diced
1 bunch basil, chopped
1 mango, diced
1/2 c white cranberry juice
1 teas lime juice
Method:
1. grill pineapple until nice grill marks form. dice
2. in sauce pan, combine remaining ingredients and heat on low for 12-15 minutes. add pineapple & serve warm or chilled over fish, chicken, pork or even as a dip for a summertime party!
