Caramelized Cauliflower Soup
My wife makes the most amazing pasta with caramelized cauliflower, the right amount of spice & long noodles... Awesome! I thought I would take her inspiration & add a little twist to it!

Caramelized Cauliflower Soup
3 heads cauliflower, chopped
3 T olive oil
1 T ancho chili powder
Pinch of salt
Pinch of pepper
1/4 c yellow onion, fine diced
1/4 c celery, fine diced
1/4 c carrots, fine diced
2 quarts chicken stock
1 quart heavy cream
1 c havarti cheese, shredded
Method:
Preheat oven to 375 degrees. Toss cauliflower in olive oil, chili powder, salt & pepper. Roast in oven 20-25 minutes until soft & caramelized. In stock pot, sauté carrots, celery & onions until translucent. Add cauliflower & other ingredients except cheese & bring to slow boil on low heat. Purée if desired or if not, add cheese & stir in. Enjoy!
