Cracklin Pork Belly Sliders
As I get ready to board a plane to Chicago for 7 days to master my craft and team up with a top notch group of guys that can flat out cook, I would be remiss if I didn't shout out and recognize that these guys represent the finest set of chefs that our company has to offer. I am happy to share the floor with this great group of dudes! Here is a recipe that inspires me!
First off, a pork belly is unsliced bacon, plain and simple. raw, not smoked, fatty goodness! This killer recipe includes honey, blue cheese, hot sauce & of course, the Belly!

Cracklin Pork Belly Sliders
1 pork belly(can be ordered through a butcher) & will produce a LOT, so, share with friends
honey
smokey BBQ seasoning
water
crumbled blue cheese
coleslaw mix
mayonnaise
hot sauce
slider rolls
horseradish
cream
Method:
1.rub belly with BBQ & honey. place in pan with a little water and roast in 250 degree oven for 4 hours. until fork tender. let rest and cut into 1X1 cubes.
2.in bowl, combine blue cheese, hot sauce & coleslaw mix with mayonnaise mixing well. let stand in fridge for 30 minutes.
3.in separate bowl, mix horseradish & cream well.
4.build sliders topping with coleslaw & horseradish cream.
