Chicken Gezann Part 2 ( the best is yet to come)

Yes, my wife had a pet monkey when she lived in Africa!  I always knew she had monkey like tendencies!!!   Oh yeah, she also lived next door to the Actual Shirley Temple!  What a life this kid had.  All these little stories make up who she is and why I love her is clearly evident...She's as crazy as me!

Here's the second piece to the Gezann family Chicken.

Chicken Gezann

4 boneless chicken breast 5 oz.  cleaned of any fat
4 eggs
flour
olive oil
1 c heavy cream
cinnamon
nutmeg
cayenne pepper
1/4 c brown sugar
1/2 c pecans
2 oz dried cranberries
1/3 c caramelized onions

Method:

1.in bowl, mix eggs, dredge chicken in flour ant then into egg wash.
2.cook in saute pan with olive oil in it browning on both sides. remove from oil and finish baking in oven.
3.with the squash mixture from part 1, add heavy cream, cinnamon & nutmeg.  whip together & transfer to a sauce pan.  heat on low until a soft boil.
4.in small saute pan, heat pecans with a little cinnamon, cayenne pepper & brown sugar until well caramelized.
5.in separate pan, heat cranberries with caramelized onions.
6.plate chicken with cranberry mixture on top.  Spoon butternut squash cream sauce over top.
7.no need for starch but, if you want to be a full Gezann, bake some sweet potatoes with brown sugar & cinnamon & butter.
