Margarita Pasta

Yesterday, I flew in to Milwaukee to show support at an event for our company.  Today, I woke up to find the ground covered with snow!  Surprise right???  Not so much, it is not summer yet, that's for sure!  Here's a little dish that I got the chance to make today for our friends in Milwaukee in hopes of summer coming soon!

Margarita Pasta

1/2 lb orrechiette pasta(little hats),cooked
cherry tomatoes
olive oil
caramelized red onions
red & yellow peppers, sliced
Margarita cocktail mix
salt & pepper
cream
butter
breaded shrimp

Method:

1.in saute, heat vegetables in olive oil, browning slightly.
2.deglaze pan with Margarita mix, reducing for about a minute.
3.add cream, salt, pepper & butter and reduce.
4.fry shrimp.
5.add pasta to cream sauce, plate and top with shrimp!  Enjoy with a ice cold corona!
