Culinary Challenge Steak & Crab
A couple of days ago, I was blessed to have the opportunity to design and participate in a premier culinary event in the Cleveland area! It took months to prepare for and days to set up. Oh yeah, about an hour to rip it all down! You see, I got the chance to set up a lineup of what Cleveland has to offer and they all delivered! It was an event that I am sure that we will see more of in the near future! I wanted to take a minute and share a dish that I got the chance to make during my challenge. Hope you enjoy it!

Top Sirloin Baked Steak with Creamy Crab Cake
2 8oz top sirloin steak
panko bread crumbs
cinnamon
cajun spice
2 redskin potatoes, diced
1 banana pepper,diced fine
1 red pepper, diced
butter
white wine
cream
salt & pepper
6 oz crab meat
1 egg
oil
crispy spinach
Method:
1. slice steak into medallions, dredge in panko crumbs mixed with cinnamon & cajun spice.
2. sear in hot pan with oil until browned well.
3.in bowl mix crab, peppers, egg, salt & pepper. form into crab cakes. sear in hot saute pan with oil. Brown both sides.
4.saute potatoes with salt, pepper, white wine & cream until soft.
5.fry spinach and assemble plate.
