Chicken Saltimbocca

Don't you just love it when you out of the blue remember a recipe that you used to make that used to make so many people happy!!!  Here's one that just came to me!

Chicken Saltimbocca

4 chicken breasts
flour
5 eggs, whipped
salt & pepper
olive oil
3 c. escarole, cleaned & boiled
4 slices mozzarella cheese
2 c. chopped cleaned mushrooms
1 c. Marsala wine
2 T. butter + 2 T. butter
1 teas. lemon juice
1/2 lb. cooked linguine
marinara sauce
Romano cheese

Method:

1.flour and egg chicken with salt & pepper as well.
2.fry in olive oil to brown.
3.place on top of escarole, chicken and cheese. bake in 350 degree oven for 5-6 minutes.
4.in saute, heat mushrooms with wine and whisk in 2 T. butter. pour over chicken.
5.in separate pan, heat lemon juice and whisk in remaining butter. pour over chicken
6.serve with pasta & sauce topped with Romano cheese sprinkles
