Shepard's Pie
Spent some time today with 2000 of my closest friends! What a site, 2000 men singing praises and glory to God! Wow! I was inspired by the presenters and recommend any conference like this to both men and women who just need to RE FOCUS!
This recipe is the result of my passion for food and a passion for God. Enjoy!
Shepard's Pie
2 lbs potatoes, cut
Salt & pepper
1 T. olive oil
2 lbs ground chuck
1 red onion, diced
2 carrots, diced
4 oz. portobella mushrooms, chopped
2 T. butter
2 T. flour
2 c. beef stock
1 T. steak sauce
3 T. sour cream
1 egg yolk
4 T. sour cream
1/4 lb. shredded cheddar cheese
3 T. chopped chives
1 teas. paprika
Method:
1.place potatoes in pot, cover with cold water and bring up to a boil. Boil potatoes until tender. reserve some of the starchy water for later.
2.Heat saute pan over medium heat. Add oil, onions and carrots. cook until onions are transluclent and carrots are tender, add ground chuck and mushrooms, cooking over medium heat until just fully cooked. Add salt, pepper to season.
3.In separate pan heat butter and add flour cooking a minute or 2 until roux forms. add beef stock and steak sauce. sauce will reduce to gravy. Pour over top beef mixture.
4.cook egg whisking it together with remaining starch water. Mash potatoes with egg mixture, sour cream, cheddar, chives, salt & pepper.
5.Spread mashed potatoes over beef mixture in oven pan. Top with paprika and heat under broiler 2-3 minutes. Serve immediately.
