Filet with Citrus Chimichurri Sauce
This is one I worked on today with a customer. Man, this was good stuff! Serve with roasted fingerling potatoes and a nice bottle of Italian Sangiovese. My thanks to the NEOUCOM team for your hard work, willingness and patience.
Filet with Citrus Chimichurri Sauce
2 6oz filets
salt & pepper
rosemary
basil
mint
thyme
chives
1/2 teas. minced garlic
1 shallot, sliced
1 teas. sugar
3 T. orange juice
1/4 c + 2 T. olive oil
6 ea. fingerling potatoes
Method:
1.Season filets with Salt & Pepper. Grill to desired temperature.
2.Season potatoes with some rosemary, salt, pepper, chives and 1T. oil. Roast in 325 degree oven for 10-12 minutes.
3.In Saute pan, heat shallots, 1T. oil and sugar over low heat until caramelized.
4.In blender, combine herbs, 1/4c. oil, orange juice, garlic and shallots. Pulse until herbs are minced and a nice vinaigrette style sauce forms.
5.Plate potatoes, Filets and top with chimichurri sauce.
