Bacon! I don't know if there is a more pleasing word in the world of food than BACON!!!!
This recipe however is not about bacon, however it is from an equally delicious part of the pig.
Bottom line is this: pork = flavor and flavor = happiness, therefore flavor = happiness; so, pig it is!
Here's a simple recipe that you can do with Spring time in mind!

Spicy carnita cups with whipped avocado and fire roasted tomatoes
Ingredients
2 balls pizza dough (12 oz) (cut into 1 oz pieces)
press into small cupcake or muffin pans and bake at 375 degrees for 8-10 minutes or until cooked throughout.
For pork:
4 lb pulled pork without sauce
1/2 can Coors beer
1 c stewed tomatoes
1 T. red wine vinegar
1/4 c. brown sugar
1 small red onion, fine diced
1 small ancho chile pepper, fine diced
1/2 fresh jalapeno, fine diced
fresh cilantro
In sauce pan on medium heat, heat all ingredients except pork to slow boil. Puree with hand blender.
Heat pork and toss with some of the sauce.
For roasted tomatoes:
2 pints grape tomatoes
1 t. Italian seasoning
2 T. olive oil
kosher salt and cracked black pepper (to taste)
Combine all ingredients and toss. In 375 degree oven, heat for 15-18 minutes or until tomatoes are nice and roasted.
For whipped avocado:
4 whole avocados
1 t. diced fine red onions
fresh cilantro
1/2 lime (juiced)
1/2 c heavy cream
kosher salt and cracked black pepper (to taste)
1/4 t. Cajun seasoning
1 t. olive oil
in bowl, combine all ingredients except cream, breaking down avocados. once mixed well, whip cream into it.
To put it all together, take the pastry cups, top with the pork, a little extra sauce, tomatoes and a spoon of avocado cream!
