Maybe it's the snow, maybe it's the fact that my favorite time of year is officially over or, maybe... It's just the fact that food makes me happy:) As I was swooning nostalgic over some old food photogs, this simple yet, fantastic little dish popped up! Right there... begging to be looked at again, and again, and again! Scallops are the sea's little secret; sweet and; not fishlike. allows for great caramelization, and will take on just about any flavor that you can impart onto it. This one is simply seasoned and seared in a hot pan. When you add the combination of fresh honey with fresh squeezed Meyer lemon juice and a hint of mint or basil. Yep, it's just that good!

Meyer lemon scented sea scallops with honey glaze
12 ea U-10 sea scallops or 10-20 count size depending on appetite
pinch cardamon
sea salt and fresh cracked pepper, to taste
olive oil
1/4 c honey
3 T Meyer lemon juice
1 sprig mint or basil leaves
method:
1.in hot saute pan, heat oil. season scallops with a bit of cardamon, salt and pepper.
2.sear scallops 2 minutes each side. remove from pan.
3.in scallop pan, add, honey, Meyer lemon juice on low heat and reduce by half.
4.pour through strainer onto scallops.
5.garnish with mint or basil.
