Parma Style Pasta

A week in Chicago has given new inspiration on all things food!  Playing with cool products, working new recipes and training new ideas.  Since my heart will always be with Italian food, I decided to explore my roots with a natural flavor.

Parma Style Pasta
4 oz cooked penne noodles
2 oz shaved all natural ham
1/4 c sliced fennel(anise)
1/4 c sliced red onion
pine nuts
asiago cheese
heavy cream
spinach
salt & pepper

Method:

1.saute fennel with onions with ham, add cream and reduce.
2.add remaining ingredients except for a small portion of ham & nuts.
3.plate and top with fresh ham & pine nuts.
