The Week that Is

This week, after travel for work has settled down, painting @ home seems to be done for now, it's time to have a little tasting!  There are many things that are enjoyable about fall but, to me the most enjoyable thing is enjoying food with friends!  a way to relax and celebrate the season of harvest!  When else can you cook with some fantastic vegetables that are truly wonderful and full of flavor when in the season.

Deconstructed Autumn Pierogi

2 c pierogi dough
1/2 c roasted butternut squash with cinnamon, butter & brown sugar
1/4 c gruyere cheese,shredded
1/2 c smoked chicken,pulled
2 T. spiced pecans
1 c marinara sauce

Method:

1.pierogi dough is 2 eggs, 2 T olive oil, 2 c flour, salt, pepper, 2 T sour cream
2.roasted squash
3.roll out dough and cut into squares.  flash fry until golden brown in saute pan with olive oil
4.top with gruyere, squash, smoked chicken & pecans
5.heat in oven for 5-8 minutes
6.serve with marinara sauce
