This Really Happens Part 2
So, as we drank wine with a great couple of folks in VA, let me give you the rundown of a couple of peeps who I was lucky enough to relax with. Mr & Mrs. Banks of course, my new friends Jordan & Spike from D.C. (Spike has a few joints in the DC area) & four friends from Work; Rocco, Bill, Mike & Jeff. As I said before, it was an amazing trip. from a cool afternoon boat ride to swimming in a salt water swimming pool! Every minute was awesome. And the opportunity to cook was for a worthy cause, feeding the hungry.

Bacon Onion Marmalade
½ c. Brown Sugar
2 c. White Balsamic Vinegar
8 sl. Bacon(sliced)
½ large Spanish Onion(sliced)
2 T. Honey
Cracked black peppercorn
Method:
1.slice & render bacon. Reserve
2.cook onions in bacon fat until translucent.
3.add vinegar for 5-10 minutes on medium heat to a mild simmer. Let reduce.
4.add brown sugar & let reduce by half.
5.add honey & pepper.
6.taste for flavor, adjust seasonings accordingly
