Lobster Jambalaya

As I look out my window to 8 inches of new snow,  I know that we are only a month away from the beginning of spring!  Keep saying it and it will happen...right?   If we keep thinking of warm weather and fun times, I am sure that good things can come.

Lobster Jambalaya

1/2 lb lobster claw & knuckle meat
2 links andouille sausage links, sliced
2 chicken breasts, julienned
Cajun seasoning
12 oz Spanish rice
1/4 c diced red onions
1/4 c diced red peppers
chicken broth


Method:

1.saute chicken in Cajun spices. 
2.cook rice and add in all other ingredients on low heat. 
3.serve in a nice family style bowl.
