The Q Spot Holiday Rubbed Ribeye
To the top of the wall, now dash away, dash away, dash away all! Tis the Holiday season and what better to spice it up a little Christmas cheer than a warm and sweet rub for the roast beast!

The Q Spot Holiday Rubbed Ribeye
1 whole ribeye
rub:
1/4 c salt
1/4 c Cajun spice
1/2 c fine coffee grounds(espresso if possible)
1/4 c cocoa powder
1/2 c brown sugar
topping:
3 sweet onions, sliced thin
1/4 c. sugar
salt & pepper
olive oil
method:
1.combine salt, Cajun spice, coffee, cocoa & sugar in bowl. Mix well.
2.crust ribeye night before Christmas rubbing liberally.
3.roast ribeye @ 375 degrees for 20 minutes, turn oven down to 300 and cook until internal temperature reaches 135-140 degrees for medium rare or desired temperature(about 2 hours)be sure to check regularly!
4.in large saute on low heat caramelize onions with sugar, salt, pepper & oil until translucent.
5.layer onions over top of rib and place back in the oven at 300 for 5-7 minutes.
6.carve and enjoy!
