Paella
Mi Amigo from Indianapolis has requested something Spanish from me! I am happy to oblige him. I went tonight to watch my 1st born soccer star play against what looked like soccer's version of the bad news bears...running around with no practicing or anything. And then, the whistle blew. about an hour later, well, they lost 8-1 and the bad news bears, well, Not so bad!

Spanish Paella
1 T minced garlic
2 T olive oil
12 mussels
6 clams
12 shrimp
6 scallops
2 chopped tomatoes
8 oz cooked Spanish rice
1/2 c white wine
3 c. fish stock or broth(clam juice will work)
4 sticks saffron( not entirely necessary ) these will season and color the fish stock
1/2 chopped onion
fresh chopped parsley
chopped cilantro
sliced bread crostinis(grilled)
grated Romano cheese
salt & pepper
Method:
1.cook rice until just al dente
2.in large pan, saute garlic, oil, mussels, clams, shrimp, scallops, salt & pepper about 2-3 minutes.
3.add fish broth and saffron. Turn down to low heat.
4.add tomatoes, wine, onion, parsley & cilantro.
5.pour over rice, serve with crostinis and top with cheese.
