Freeh Corned Beef Panini & Spinach Salad Combo

Have you ever formed a pattern in food?  That is, when you go to a restaurant, any restaurant and you see that time on the menu that you have had a million times over, YOU STILL ORDER IT.  thinking that this restaurant might do it differently than the last 24 others...That's food passion, something that you hold on to over time, something that on your first smell of it or your first taste, your brain is instantly in a time machine that takes you back to the exact moment when you first really enjoyed it!  This will hopefully be one of those dishes for you!

Corned Beef Panini & Garden Fresh Spinach Salad

2 slices rye bread
4 oz sliced corned beef
shaved red onions
farm fresh spinach-4 to 5 leaves
2 T. 1000 island dressing
1/4 teas. siracha sauce(rooster sauce)
1 oz cheddar jack cheese, shredded
butter
farm fresh spinach(large handful)
2 oranges segmented
1 carrot, shaved
1/2 c orange juice
2 T. mayonnaise
2 teas. rice vinegar
poppy seeds

Method:

1. in bowl, mix 1000 island and siracha sauce well.
2.butter rye bread on one side of each piece.  on unbuttered side, layer beef, onion, spinach, spiked 1000 island & cheese.  cook on panini press until finished.
3. in separate bowl, whisk OJ, mayo, vinegar & poppies well.  add spinach, oranges & carrots.  toss well
4. plate sandwich with salad on side.
