Almond Pancakes with Honey Chive Butter

I don't really eat breakfast much... I try to but, I go to work and my breakfast usually consists of coffee followed by another cup!  It's on the weekends when breakfast is usually added as a side dish to the coffee.
This is a kinda weird recipe that has very distinct flavors that are all very good separately but, when you put them together, the layers of flavors are both complex and balanced.  The butter is also a great addition for bread, steaks or seafood any other time of the day.

Almond Pancakes with Honey Chive Butter

pancake mix
2 c heavy cream
6 eggs
4 c flour
1 stick butter, melted
1/2 teas baking powder
1/4 teas baking soda
1 1/2 teas almond extract
2 T. sugar
pinch of cinnamon
pinch of cayenne pepper
sliced almonds

honey butter
1 lb salted butter
3 T honey
chives, chopped

Method:
for pancakes
1. in bowl combine all ingredients except for almonds.  mix well
2. cook on hot plate or skillet.  top with almonds.
for butter
1. in mixer, whip butter until completely soft and creamy on medium
2. add honey and chives and mix well
3.top pancakes with butter
