Today is about one word....Relevance. Nothing we do can singularly control how people think about what we do & how we do it unless we are relevant! Why does that guy produce this thing that way? Did you see this item on that guys' menu? I can't wait to try that next time! These are all passion evoking words or phrases that speak to that word... Relevance! I try to do things in my world that help keep our customers "relevant" Consolidating menus, creating new ideas, adding on trend items. It has never been more important than today to be "Relevant". In an effort to be an important cog in the wheel of society, I will continue to work on ideas in my world.... My food world, that is; that strive to speak to the above term!

Mexican Cola cured Shrimp on spiced yams & grilled pineapple salsa
4 ea U12 sized Shrimp, cleaned & peeled
2 bottles Mexican cola
2 ea yams, sliced
1 t ancho chili powder
salt & pepper
olive oil
1 pineapple, grilled
1/2 red pepper, diced
1/2 red onion, diced fine
1 ea green onion, chopped
10 basil leaves, chiffonade cut
3 T Key Lime juice
1 T olive oil
method:
in sauce pot, reduce cola on medium low heat by half. once cooled a bit, pour over shrimp. season yams with oil, salt, pepper & ancho. roast in 325 degree oven for 20-25 minutes or until cooked through & toasty brown on top. slice & grill pineapple, dice. in bowl, combine pineapple, red pepper, onions, basil, juice & 1 T olive oil. saute shrimp & serve on top of spiced yams. finish with grilled pineapple salsa & a drizzle of remaining cola over top.
