Exciting times!!!
As we turn the corner on Summer, 160 days by the way... I have been in a fortunate situation that continues to compel me. My niece, Amanda, got married last weekend to the love of her life, Antone! It was a chilly 104 degrees on that blessed day... But, even through the heat, it was a beautiful ceremony and a wonderful day of family, friends and LOVE!!!
I got the opportunity to cook for them for their rehearsal dinner overlooking the river with a Texas "picnic" style feast. The menu featured Smoked pork ribs, pulled pork sammies, corn with 2 different flavored butters, Sheri's family famous baked beans & a smokey chipotle potato salad.

Smokey Chipotle Potato Salad
4 c. diced red potatoes, cooked
1 c. caramelized bacon
green onions, chopped
2 eggs, hard boiled, chopped
1/2 c. diced red peppers
fresh dill
1 c. chipotle mayonnaise
salt & pepper
Method:
1.in bowl, combine all ingredients and cover.
2.place in fridge overnight.
3.serve with your favorite BBQ!!
